Orange Carrot Cake Bites
1 cup finely shredded coconut, divided
1 cup almond butter or natural peanut butter
1 cup dried cranberries
1/2 cup raw honey
1/2 teaspoon salt
2 tablespoons chia seeds
1 carrot shredded
1/2 teaspoon Simply Organic Orange Flavor Certified Organic (this can be adjusted to taste)
1. Place all ingredients into your Vitamix or food processor except for half cup of the shredded coconut. Mix just until blended together. Can be done by hand but you have to be super strong
2. Form into balls and then roll in remaining coconut.
3. Refrigerate and Enjoy!
